Presentation of the Culinary Culture of the Turkic World at the outskirts of Tian Shen Mountains
The International Organization of Turkic Culture (TURKSOY) organized the “1st Ethno Festival of Traditional Cuisine of Turkic Peoples : Supara” which took place on the Chunkurchak Plateau of Tian Shen Mountains in Kyrgyzstan. The festival
organized in cooperation of TURKSOY with the Ministry of Culture, Information, Sports and Youth of Kyrgyzstan was hosted by the Supara Ethno Complex and gathered cooks from Azerbaijan, Kazakhstan, Uzbekistan, Turkey, Hungary and North Macedonia as well as Kyrgyzstan.
At the festival organized in order to contribute to the strengthening of unity and brotherhood among Turkic peoples as well as to the revival of traditional dishes cooks from various countries of the Turkic World introduced the dishes they prepared.
The stands featuring colourful examples of the culinary culture of the Turkic World were highly appreciated by the participants. The members of the jury visited the stands one by one, tasted the dishes and beverages and were informed about the history of the dishes prepared in advance.
In the speech he delivered at the opening ceremony of the festival, Secretary General Sultan Raev, drew attention to the meaning and importance of the dining table among Turkic peoples, and stressed that it has ever since been the place where Turkic peoples came together got acquainted with eachother and strengthened their ties of unity.
Secretary General Raev further stated that the "Ethno Festival of Traditional Cuisine of Turkic Peoples" was hosted by Kyrgyzstan for the first time, and said that well-known master chef teams from 7 countries participated in the festival. Mr. Raev who also said that every nation is proud of its own cuisine, added: "Nowadays, our dining tables feature dishes from various cultures and countries worldwide and I believe that we should offer natural dishes which are the legacy of our ancestors as an alternative. This is why with the festival, we have organized this festival to revive traditional dishes of the Turkic World some of which have fallen into oblivion and explain the history and philosophy behind these dishes."
Secretary General Raev also explained the meaning of the name they gave to the saying that the word “supara” actually means “table” in English and that it is almost identical in terms of its meaning among all peoples of the Turkic World.
Within the scope of the festival, "Culinary Union of the Turkic World" was established under the initiatives and organisation of TURKSOY. Professor Tahir Amiraslanov, President of the Azerbaijan National Chefs Union, was elected as the President of the Union established to promote the culinary culture of Turkic peoples.
Mr. Seraceddin Gürbüz, Lecturer of Gastronomy and Culinary Arts at the Faculty of Tourism of the Ankara Hacı Bayram Veli University who attended the festival representing Turkey, introduced the Turkish dishes “mutancana”, “firik pilaf”, “almond soup” and “sultan sherbet”.
The famous North Macedonian Chef Nexhmiddin Beqiri, who participated in the festival with the contributions of the Turkish Maarif Foundation, introduced the Macedonian style dried beans with sausage (tavçe gravçe), kashar cheese meatballs with kashar, stuffed peppers with cream and shopska salad.
At the end of the festival, where minstrels and dance ensembles took the scene various gifts were offered to the participating Cooks.
The next "Ethno Festival of Traditional Cuisine of Turkic Peoples" will be held in Uzbekistan in 2024.
